Ground Meat Jerky Strips

Often, we think of ground beef when thinking about jerky strips. But many other types of meat can be used, as well as combining different meats – hence the name, Ground Meat Jerky Strips. You can make strips or sausage-like sticks without the casing. Truthfully, you can shape them however you desire. The key to success is that the shapes are thin. 1/8 to 1/4  inch thick. The thinner the strips, the quicker they will dry.

Classic Ground Beef Jerky Strips

Ingredients

  • 1-pound lean ground beef
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Liquid smoke (optional for added flavor) – use sparingly.

Instructions

Mix all the ingredients in a bowl until well combined.

               If you use liquid smoke, a little goes a long way. You don’t want it overpowering the other ingredients.

Marinate for an hour or more in the fridge so that the ingredients blend well together.

Shape the ground beef mixture into thin strips or sticks.

Place the strips on dehydrator trays or oven racks.

Dehydrate or bake until the jerky reaches your desired consistency.


Savory Ground Beef and Pork Jerky Twists

Ingredients

  • 1/2-pound lean ground beef
  • 1/2-pound lean ground pork
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Liquid smoke (optional)

Instructions

1. In a bowl, combine ground beef and ground pork.

2. Add soy sauce, Worcestershire sauce, brown sugar, garlic powder, onion powder, black pepper, and liquid smoke (if using). Mix well.

3. Shape the mixture into twisted strips or sticks.

4. Arrange the twists on dehydrator trays or oven racks.

5. Dehydrate or bake until the jerky reaches your preferred level of dryness.


Bold Ground Beef and Venison Jerky Rounds

Ingredients

  • 1/2-pound lean ground beef
  • 1/2-pound ground venison
  • 1/4 cup teriyaki sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Sesame seeds for coating (optional)

Instructions

Combine ground beef and ground venison in a bowl.

Add teriyaki sauce, apple cider vinegar, honey, smoked paprika, and garlic powder. Mix thoroughly.

Marinate for an hour or more in the fridge to allow the flavors to fully blend.

Shape the mixture into flat rounds or small patties.

               I use a scoop (a small ice cream scoop type), so that all the patties come out the same size which is important for timing when you dehydrate.

Optionally, coat the jerky rounds with sesame seeds for added texture.

Place the rounds on dehydrator trays or oven racks.

Dehydrate or bake until the jerky reaches the desired level of dryness.

Combining ground meat with fruit, especially berries, can create a delicious sweet and savory jerky.

Ingredients

  • 1/2-pound lean ground beef or buffalo
  • 1/2 cup mixed dried berries (e.g., cranberries, blueberries, raspberries)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon black pepper
  • Pinch of salt

Instructions

1. In a bowl, combine ground beef with mixed dried berries.

2. Add apple cider vinegar, honey, cinnamon, nutmeg, black pepper, and a pinch of salt. Mix thoroughly to ensure even distribution.

3. Let the mixture marinate for at least 30 minutes to allow the flavors to meld.

4. Shape the mixture into flat strips, rounds, or your preferred jerky shape.

5. Place the shaped jerky on dehydrator trays or oven racks.
