You will find a variety of Pork Jerky Recipes here. No matter your preference, we will have a recipe for you. We will always be on the lookout for more recipes, so check back or scroll down to the links at the bottom of the page.

These recipes include sweet and spicy, savory, and teriyaki – which is always a favorite, no matter what the meat – and smoky. Fruit and pork are a natural combination. I will add some ideas to the next set of recipes.

Sweet and Spicy Pork Jerky

Ingredients

  • 1 pound pork loin, thinly and evenly sliced
  • 1/2 cup soy sauce (or Tamari)
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)

Instructions

  1. Combine soy sauce, honey, brown sugar, sesame oil, garlic powder, onion powder, and crushed red pepper flakes in a bowl to make the marinade.
  2. Place the pork slices in a resealable plastic bag or other container and pour the marinade over them. Refrigerate for at least 4 hours or overnight.
  3. Preheat your dehydrator or oven to the appropriate temperature for jerky.
  4. Remove the pork from the marinade and pat it dry with paper towels.
  5. Arrange the pork slices on the dehydrator trays or oven racks, leaving space between each piece.
  6. Dry the pork until it reaches your desired level of chewiness, typically 4-6 hours in a dehydrator or longer in an oven set to a low temperature (160 to 200 F).

Maple Bourbon Pork Jerky

Ingredients

  • 1 pound pork tenderloin, thinly sliced
  • 1/2 cup bourbon
  • 1/4 cup pure maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. In a bowl, whisk together bourbon, maple syrup, soy sauce, Dijon mustard, black pepper, and smoked paprika to create the marinade.
  2. Place the pork slices in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 4 hours or overnight.
  3. Preheat your dehydrator or oven.
  4. Remove the pork from the marinade and pat it dry with paper towels.
  5. Arrange the pork slices on the dehydrator trays or oven racks.
  6. Dry the pork until it reaches the desired level of jerky consistency.

Teriyaki Ginger Pork Jerky

Ingredients

  • 1 pound pork sirloin, thinly sliced
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons brown sugar
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sesame seeds (optional)

Instructions

  1. Mix soy sauce, mirin, brown sugar, grated ginger, and garlic powder to create the teriyaki marinade.
  2. Place the pork slices in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 4 hours or overnight.
  3. Preheat your dehydrator or oven.
  4. Remove the pork from the marinade and pat it dry with paper towels.
  5. Arrange the pork slices on the dehydrator trays or oven racks.
  6. Sprinkle sesame seeds on top if desired. (I personally don’t use the sesame seeds.)
  7. Dry the pork until it achieves the desired jerky texture. This recipe is best in an oven or dehydrator.

Smoky BBQ Pork Jerky

Ingredients

  • 1 pound pork loin, thinly sliced
  • 1/2 cup tomato sauce
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon onion powder

Instructions

  1. Combine tomato sauce, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, cayenne pepper, and onion powder to create the BBQ marinade.
  2. Place the pork slices in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 4 hours or overnight.
  3. Preheat your dehydrator or oven.
  4. Remove the pork from the marinade and pat it dry with paper towels.
  5. Arrange the pork slices on the dehydrator trays, oven racks, or on smoker racks.
  6. Dry the pork until it reaches the desired jerky consistency.

Note: I believe this recipe is best made in a smoker, but if you like the smoky flavor and want to add a little liquid smoke (1/2 a teaspoon), it might enhance the smoky flavor. Try it both ways and see which you like best.
