Tips For Freshness and Flavor
Jerky, with its many sweet and savory flavors and chewy texture, is a beloved snack enjoyed by many. Whether it’s made from beef, turkey, or other meats, proper storage and preservation techniques are essential to maintain its freshness and flavor over time.
In this article, we’ll explore some tips for storing and preserving jerky to ensure that it stays delicious for as long as possible. Afterall, after you put all that time and effort into making quality jerky, you want it to last.

Choosing the Right Container
You want an airtight container as air can cause any food to spoil. The drier the jerky, the longer it will last naturally. But I for one, like a more tender jerky.
- Reusable Bags like Ziplock or even these newer vinyl zipper pouches. If you’re going to freeze the jerky, use Ziplock Freezer bags for better protection.
- Vacuum-Sealed Pouches
- Glass Jars – these work best if you use a vacuum sealer if it will be a while before you open the jar again. You can’t squeeze the air out of a jar like a bag or pouch – obviously. Be sure the jar is clean and dry before adding jerky.
I like the wide-mouth jars so you can get your hand in to pick out the next piece of jerky.
Keep it Cool and Dry
Store jerky in a cool, dry place away from direct sunlight and heat sources. Excessive heat and humidity can cause jerky to spoil quickly and lead to mold growth.
A pantry or cupboard is an ideal storage location for jerky. Avoid storing it near the stove, oven, or dishwasher, as these areas tend to be warmer and more humid.
I know some people like to keep a bag or two in their vehicle for on the road. Take it with you for trips, but it is not recommended that you just keep jerky for weeks inside a vehicle.
Refrigeration Keeps Jerky Fresher Longer
While jerky is shelf-stable and can be stored at room temperature for several weeks, refrigeration can extend its shelf life to months.
If you plan to store jerky for an extended period or live in a warm climate, consider refrigerating or freezing it. Refrigerated jerky can last for several months, while frozen jerky can remain fresh for up to a year or longer.
Properly Freezing Jerky
Before freezing jerky, ensure that it’s properly sealed to prevent freezer burn and moisture loss. Use vacuum-sealed bags or wrap the jerky tightly in freezer-safe wrap.
Label the packages with the date of freezing to keep track of freshness. Properly stored frozen jerky can maintain its quality and flavor for an extended period.
All you have to do is take it out of the freezer a day ahead of time and let it sit on the counter. It should taste as fresh as when you first made it.
Avoid Exposure to Air
Air exposure can lead to oxidation, which can cause the jerky to become stale and lose its flavor over time. When opening a package of jerky, reseal it tightly after removing the desired amount.
An additional safety measure is to consider dividing large batches of jerky into smaller portions for individual servings. This minimizes the amount of air exposure each time the package is opened.
To Seal It Up…
By following these tips for storing and preserving jerky, you can ensure that it stays fresh and flavorful for longer periods. Proper storage techniques are essential for maintaining quality and enjoyment, whether making homemade jerky or purchasing it from a store. With the appropriate containers, storage conditions, and precautions against air exposure, you can savor delicious jerky whenever the craving strikes.
The Other Side of the Coin
Once jerky is made, it usually doesn’t last that long. It depends on how much you make as well as if there are several people sharing the prized delicacy.
